From Passion to Profession
What started as a simple curiosity about real chocolate quickly turned into a full-time obsession for Dayle. Tired of mass-produced chocolate that lacked soul, he left the conventional path to dive deep into the ancient craft of bean-to-bar chocolate making.
He began experimenting in a small kitchen in Las Vegas, teaching himself the delicate art of roasting, winnowing, conching, and tempering. What he discovered was magical — the incredible range of flavors hidden inside the cacao bean when treated with care and respect.
His journey reached a turning point when he met John Nanci, the legendary “Godfather of Craft Chocolate.” That meeting changed everything.
Today, Dayle runs a small but passionate home chocolate lab in Las Vegas. Every single bar is made with deep respect for the cacao, the farmers who grow it, and the beautiful complexity that great chocolate can deliver.
