From Passion to Profession

What started as a simple curiosity about real chocolate quickly turned into a full-time obsession for Dayle. Tired of mass-produced chocolate that lacked soul, he left the conventional path to dive deep into the ancient craft of bean-to-bar chocolate making.

He began experimenting in a small kitchen in Las Vegas, teaching himself the delicate art of roasting, winnowing, conching, and tempering. What he discovered was magical — the incredible range of flavors hidden inside the cacao bean when treated with care and respect.

His journey reached a turning point when he met John Nanci, the legendary “Godfather of Craft Chocolate.” That meeting changed everything.
